Best known for its artisan pizza, craft beers, sandwiches, and salads, Mellow Mushroom has experienced great growth since its first restaurant opened in 1974. TriMark Strategic has designed and executed the build-out of the kitchens and bars for more than 100 new locations throughout the U.S., with approximately 20 new locations each year.
