Fast-Casual Mediterranean restaurant Zoës Kitchen elevates the concept of quick-service. The multi-unit operation came from humble beginnings as a family-owned business. Zoë Cassimus shared her Grandmother’s recipes with those close to her and after receiving rave reviews, the idea for Zoës Kitchen was born.

In 2007, the chain was sold to an investment group, which has continued to grow and expand its offerings of fresh Mediterranean-inspired cuisine to diners across 20 states.

The menu at Zoës Kitchen is full of nutritious ingredients and authentic flavors. Dishes are primarily composed of grilled or roasted protein with a variety of herbs, vegetables, grains, and light fluffy pita bread. They provide healthy alternatives like cauliflower rice and baked falafel.

The talented team in the kitchen incorporates savory spices like harissa with rosemary, dill and salty feta cheese as well as sauces like Israeli skhug, tzatziki and relishes to excite the taste buds. With the variety of vegetarian, vegan and gluten-free options, there is something for everyone. The snacks, soups, salads, stuffed pitas, sandwiches and bowls are perfect for satisfying daytime cravings. Their wholesome, complete dinners serve three to six people for an easy choice after a day’s work.

Zoës Kitchen truly aims to embody the culture. Whether you are eating in or taking food home, the goal is for guests to enjoy their meals while connecting with friends and loved ones. This has become even more evident with their new prototype location in Raleigh, North Carolina. TriMark Strategic was proud to work with Zoës Kitchen on their new interior design and equipment procurement.

The poplar open-kitchen concept allows patrons to experience the sights, sounds and scents of their culinary creations in the making. The warm colors, textiles and fixtures are casually elegant with an upscale undertone. European and family-style seating also brings an inviting feel to the space.

Enhancements didn’t stop with the décor. New food and beverages were introduced such as white wine, Prosecco, house-made sangria, beer and craft non-alcoholic beverages. As they embark on new territory in the quick-serve arena, Zoës Kitchen is positioned for expansion with new locations and increased appeal to a wider audience of diners.
