With the new year comes concepts that could shake up the industry. From making every aspect of the business picture perfect to finding ways to use back of house extras, discover 2018 trends that are inspiring restaurants to be more creative than ever before.

Restaurant Interior

Impressions are made when guests walk through the door. This year retro finishes will make a comeback. According to Architectural Digest “the splashy metals are making a statement in on-trend restaurant interiors.” Not only are metals in, but so is green; owners are infusing greenery into their décor for both local sourcing and design reasons that appeal to the eye.

Less Is More

More and more diners prefer to order smaller plates and appetizers as meals. This pattern will carry on while restaurant goers continue to desire fun, tapas-style experiences. Petite meals allow customers to enjoy dishes they may not typically order and share these adventures with their table companions. Consider offering small plates and snackable options to cater to the modern craving for a social dining space.

Longing for Nostalgia

Not only are interiors being influenced by the 60’s and 70’s, food trends are following suit and reverting to the era of chicken nuggets, pop rocks and potato tots. Find recipes from the past that inspire you to put your own spin on ingredients to make them even better than the original.

Veggie Drinks and Mocktails

House-made items are not limited to the kitchen. Bars are now producing fresh sodas, juices and non-alcoholic beverages that are sure to make an impression. Happy hour favorites will also include more back of house products such as leftover fruit and vegetables that will appeal to guests and decrease waste.

Totally Instagramable

It’s all about the experience and letting everyone know your opinion by posting it on social platforms. While 2017 thrived on visually appealing and colorful creations, texture is seen to be the next photo-worthy element of food that chefs will hone in on. Chewy beverages and cotton candy topped cookies are becoming the new “party in your mouth” that everyone wants to try!
